  • 1 cup blueberries (fresh or frozen)

  • ½ cup powdered sugar (for glaze)
  • ½ tsp vanilla extract (for glaze)
  • 2 tbsp freshly squeezed lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper or nonstick spray.
  2. In a medium bowl, whisk together the flour, salt, and baking powder.
  3. In a large bowl, mix melted butter, sugar, vanilla extract, eggs, lemon zest, and lemon juice until well combined.
  4. Gradually add the dry ingredients and milk to the wet mixture; stir until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 15 minutes before transferring to a cooling rack.
  9. For the glaze, whisk together melted butter, powdered sugar, vanilla extract, and lemon juice until smooth; drizzle over the cooled loaf.
