  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup All-Purpose Flour
  • 2 Large Eggs
  • 1 ½ cups Panko Breadcrumbs
  • 4 slices Cooked Chicken Breast
  • 4-8 slices Swiss Cheese
  • ½ cup Mayonnaise
  • 3 tablespoons Dijon Mustard
  • 1 tablespoon Honey
  • 1 tablespoon Lemon Juice


Instructions

  1. Preheat your oven to 400°F (200°C) if baking, or heat oil in a frying pan over medium heat for frying.
  2. Pound the chicken breasts between plastic wrap until about ½ inch thick.
  3. Set up three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with optional garlic powder and paprika.
  4. Dredge each chicken breast in flour, dip it in egg wash, then coat it in panko breadcrumbs.
  5. For frying: cook each breast in hot oil until golden brown on both sides (about 5 minutes per side). For baking: place coated chicken on a parchment-lined baking sheet and lightly spray with oil; bake for about 20-25 minutes until cooked through.
  6. Top each cooked chicken breast with slices of cooked chicken breast and Swiss cheese; return to oven briefly until the cheese melts.
  7. In a bowl, mix mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper to create the sauce.
