  • 1 bunch celery
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1/2 cup red apple vinegar
  • 1/3 cup olive oil
  • 2 1/2 tablespoon capers, coarsely chopped
  • 1 tablespoon chopped oregano
  • 1 tablespoon chopped parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes


Instructions

  1. Cut celery stalks on the bias into ½-inch slices and coarsely chop the leaves. Transfer to a large bowl.
  2. Add sliced onion and minced garlic to the bowl.
  3. In a separate bowl, whisk together vinegar, olive oil, capers, oregano, parsley, salt, black pepper, and red pepper flakes.
  4. Pour the dressing over the vegetables and toss until well combined.
  5. Taste and adjust seasonings as needed.
  6. Cover the salad and refrigerate for at least 1 hour (up to 4 hours) to allow flavors to meld.
  7. Toss again before serving chilled.
