Instructions
- Cut celery stalks on the bias into ½-inch slices and coarsely chop the leaves. Transfer to a large bowl.
- Add sliced onion and minced garlic to the bowl.
- In a separate bowl, whisk together vinegar, olive oil, capers, oregano, parsley, salt, black pepper, and red pepper flakes.
- Pour the dressing over the vegetables and toss until well combined.
