  • 1 cup basmati rice
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup yellow onion, diced
  • 1/2 cup celery, diced
  • 1 1/2 cups vegetable stock
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon sea salt


Instructions

  1. In a medium saucepan over medium heat, warm the olive oil. Add the diced onion and celery along with 1/2 teaspoon of salt. Sauté for about 4-5 minutes until tender.
  2. Stir in the rinsed basmati rice, tossing it in the oil and vegetables until coated. Add the vegetable stock and lemon juice; stir well and bring to a boil.
  3. Reduce heat to low, cover the pot tightly, and simmer for 13-15 minutes until all liquid is absorbed and rice is tender. Remove from heat and let sit covered for an additional 5-6 minutes.
  4. Fluff the rice with a fork before mixing in the fresh dill and lemon zest. Adjust seasoning as necessary before serving.
