  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 1/3 cup red onion, thinly sliced
  • Kalamata olives for garnish
  • Feta cheese for garnish
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1 tablespoon Dijon mustard
  • 1-1/2 teaspoons dried oregano
  • 3 tablespoons kalamata olives, pitted and chopped
  • 3 tablespoons feta cheese
  • 1 clove garlic, grated


Instructions

  1. Rinse and dry all vegetables thoroughly.
  2. Slice celery diagonally; chop parsley and basil; reserve some celery leaves for garnish.
  3. Combine celery, tomatoes, parsley, basil, onion, kalamata olives, and feta in a large bowl.
  4. For the dressing, whisk together olive oil, lemon juice, lemon zest, mustard, oregano, garlic, and chopped kalamata olives in a separate bowl.
  5. Drizzle the dressing over the salad mixture; toss gently to combine.
  6. Garnish with additional kalamata olives and feta before serving.
