  • 1.5 kg Yukon Gold Potatoes
  • 375 g Unsalted Butter (cold and cubed)
  • 200 ml Whole Milk
  • 100 ml Heavy Cream
  • Salt (to taste)
  • White Pepper (optional)


Instructions

  1. Prepare your kitchen tools: food mill or ricer, large pot, small saucepan, and spatula.
  2. Cube the cold butter and chill in the refrigerator; warm the milk and cream in a small saucepan over low heat.
  3. Place whole Yukon Gold potatoes in a large pot, cover with cold water, add salt, and boil until fork-tender (25–30 minutes).
  4. Drain the cooked potatoes and let them steam dry for 5 minutes before peeling while warm. Pass through the food mill or ricer into a mixing bowl.
  5. Gradually fold in the cold butter until melted; slowly stir in the warm milk and cream mixture to achieve desired consistency.
  6. Taste and adjust seasoning if needed. Serve immediately in a warm bowl drizzled with melted butter or topped with fresh herbs.
