  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter
  • 16 oz cream cheese
  • ¼ cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 lbs fresh strawberries
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar


Instructions

  1. For the crust, combine graham cracker crumbs and melted butter in a mixing bowl. Press into a 9×13 inch baking dish.
  2. In another bowl, beat cream cheese, sugar, lemon juice, and vanilla until smooth. In a separate bowl, whip heavy cream until soft peaks form; gradually add powdered sugar.
  3. Fold whipped cream into the cream cheese mixture and spread half over the crust.
  4. Layer half of the sliced strawberries on top, then repeat with remaining cheesecake filling and strawberries.
  5. Whip additional heavy cream with powdered sugar until soft peaks form; fold in strawberry Jello mix. Spread over the last layer of strawberries.
  6. Cover and chill for at least 4 hours before serving.
