  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 12-15 Oreo cookies (chopped)
  • 4 oz semi-sweet chocolate (for ganache)
  • 1/2 cup whipping cream
  • Additional whipped cream (for decorating)
  • 4-5 Oreos (chopped or crushed, for decorating)


Instructions

  1. Preheat your oven to 325°F (170°C) and set the oven rack one-third from the bottom.
  2. Wrap a 9-inch springform pan in aluminum foil and lightly grease it.
  3. Crush the Oreo cookies and mix them with melted butter to form the crust, pressing it into the bottom of the pan.
  4. In a mixing bowl, beat together cream cheese and sugar until smooth, then add sour cream, eggs, and cornstarch until combined.
  5. Fold in chopped Oreos and pour the mixture over the crust.
  6. Bake for about 55 minutes until edges are set; allow cooling gradually.
  7. For ganache, heat whipping cream until simmering, then pour over chopped chocolate until melted; drizzle over cooled cheesecake.
  8. Chill for at least four hours before serving.
