Ingredients
- 8 slightly under ripe peaches
- 110 g all-purpose flour
- 250 g digestive or graham crackers
- 800 g full-fat cream cheese
- 4 large eggs
- 250 g granulated sugar
- 70 g butter
- 4 tbsp granulated sugar (for peaches)
- 1 1/4 tsp ground cinnamon
- 80 g dark brown sugar
- 2 tbsp granulated sugar (for crust)
- 75 g butter (for crust)
- 200 g sour cream
- 1 1/2 tbsp cornstarch
- 2 1/2 tsp vanilla extract
Instructions
- Prepare the peaches by peeling and slicing them. Mix with granulated sugar and cinnamon; set aside.
- For the crumble topping, mix flour, dark brown sugar, and butter until crumbly; set aside.
- Crush digestive or graham crackers, then combine with sugar and melted butter to form the crust; press into a springform pan.
- Beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla extract, and eggs one at a time until well mixed.
- Layer half of the cheesecake filling over the crust, followed by half of the peach mixture. Pour in remaining filling and top with remaining peaches and crumble topping.
- Bake at 325°F (160°C) for about 105 minutes or until set but slightly jiggly. Cool gradually before refrigerating for at least four hours.
