  • 8 slightly under ripe peaches
  • 110 g all-purpose flour
  • 250 g digestive or graham crackers
  • 800 g full-fat cream cheese
  • 4 large eggs
  • 250 g granulated sugar
  • 70 g butter
  • 4 tbsp granulated sugar (for peaches)
  • 1 1/4 tsp ground cinnamon
  • 80 g dark brown sugar
  • 2 tbsp granulated sugar (for crust)
  • 75 g butter (for crust)
  • 200 g sour cream
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract


Instructions

  1. Prepare the peaches by peeling and slicing them. Mix with granulated sugar and cinnamon; set aside.
  2. For the crumble topping, mix flour, dark brown sugar, and butter until crumbly; set aside.
  3. Crush digestive or graham crackers, then combine with sugar and melted butter to form the crust; press into a springform pan.
  4. Beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla extract, and eggs one at a time until well mixed.
  5. Layer half of the cheesecake filling over the crust, followed by half of the peach mixture. Pour in remaining filling and top with remaining peaches and crumble topping.
  6. Bake at 325°F (160°C) for about 105 minutes or until set but slightly jiggly. Cool gradually before refrigerating for at least four hours.
