  • 2 large eggs

  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 to 4 medium bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts (such as pecans or walnuts)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan (9" x 5") or line it with parchment paper.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat softened butter with brown sugar and peanut butter until fluffy using an electric mixer. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Gradually add the dry mixture to the wet ingredients alternating with sour cream until just combined.
  5. Gently fold in the mashed bananas and optional nuts.
  6. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for about ten minutes before transferring to a wire rack to cool completely.
