  • 1 large English cucumber, diced
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, thinly sliced (optional)
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • Salt and black pepper to taste


Instructions

  1. Dice the pineapple and cucumber into bite-sized pieces. Thinly slice the red onion and jalapeño (if using), and chop the cilantro.
  2. In a small bowl, whisk together lime juice, honey or maple syrup, olive oil, salt, and black pepper until well combined.
  3. In a large bowl, combine the pineapple, cucumber, red onion, cilantro, and jalapeño. Drizzle with the dressing and toss gently to coat.
  4. Serve immediately or chill for 15–30 minutes before enjoying.
