  • ½ cup cocoa powder
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • 1½ cups heavy whipping cream
  • 2 cups shredded coconut
  • Pink food coloring


Instructions

  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream softened butter and granulated sugar until fluffy. Add eggs and vanilla; mix well.
  4. Alternate adding dry ingredients and buttermilk until smooth. Stir in hot water.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, whip heavy cream with powdered sugar and vanilla until fluffy.
  7. Frost cooled cake base and top with tinted shredded coconut. Chill before serving.
