- 50g sugar
- 1 tsp lemon juice
- 1 tsp cornstarch, dissolved in 1 tbsp water
- 250g cream cheese, softened
- 100g powdered sugar
- 100g pistachio paste
- 1 tsp vanilla extract
- 200ml heavy cream, cold
- 2 eggs
- 50g sugar
- 50g sifted flour
- ½ tsp baking powder
- 200g white chocolate
- 100ml heavy cream
- 2 tbsp pistachio paste
- Green food coloring (optional)
- Crushed pistachios
- Fresh raspberries
Instructions
- For the raspberry center, cook raspberries, sugar, and lemon juice in a saucepan until soft. Stir in cornstarch dissolved in water; cook until thickened. Pour into molds and freeze.
- Beat together cream cheese, powdered sugar, pistachio paste, and vanilla extract until smooth. Whip cold heavy cream to stiff peaks and fold into the mixture.
- Spoon cheesecake filling into silicone molds, insert frozen raspberry centers, and top with more filling. Freeze until firm.
- Bake sponge base by mixing eggs and sugar until fluffy; fold in flour and baking powder. Spread on a lined tray and bake until golden. Cut into rounds to fit under each dome.
- Prepare the mirror glaze by melting white chocolate with hot cream; stir in pistachio paste.
- Unmold domes, glaze them completely, garnish with crushed pistachios and fresh raspberries, then chill before serving.
