Description

Ingredients

  • 200g fresh raspberries
  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 250g cream cheese, softened
  • 100g powdered sugar
  • 100g pistachio paste
  • 1 tsp vanilla extract
  • 200ml heavy cream, cold
  • 2 eggs
  • 50g sugar
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries


Instructions

  1. For the raspberry center, cook raspberries, sugar, and lemon juice in a saucepan until soft. Stir in cornstarch dissolved in water; cook until thickened. Pour into molds and freeze.
  2. Beat together cream cheese, powdered sugar, pistachio paste, and vanilla extract until smooth. Whip cold heavy cream to stiff peaks and fold into the mixture.
  3. Spoon cheesecake filling into silicone molds, insert frozen raspberry centers, and top with more filling. Freeze until firm.
  4. Bake sponge base by mixing eggs and sugar until fluffy; fold in flour and baking powder. Spread on a lined tray and bake until golden. Cut into rounds to fit under each dome.
  5. Prepare the mirror glaze by melting white chocolate with hot cream; stir in pistachio paste.
  6. Unmold domes, glaze them completely, garnish with crushed pistachios and fresh raspberries, then chill before serving.
