  • 1/2 cup almond butter
  • 1/2 cup organic pumpkin puree
  • 2 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup plant-based vanilla protein powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup miniature dark chocolate chips
  • 1/2 cup dark chocolate chips
  • 2 Tbsp almond butter


Instructions

  1. Line an 8" x 4" loaf pan with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, almond butter, coconut oil, maple syrup, and vanilla extract. Mix until smooth.
  3. Add plant-based protein powder, cinnamon, and salt to the wet ingredients. Stir until well combined.
  4. Gently fold in miniature dark chocolate chips.
  5. Press the mixture firmly into the prepared loaf pan and freeze while preparing the topping.
  6. Melt dark chocolate chips in a saucepan or microwave; mix in almond butter until smooth.
  7. Pour chocolate mixture over the base and spread evenly.
  8. Chill in the fridge for at least one hour before cutting into bars.
