  • 2 ripe mangoes, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, finely sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded carrots
  • 2 tablespoons roasted peanuts, chopped (optional)
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 Thai chili, finely chopped or 1/2 teaspoon red pepper flakes
  • 1 teaspoon rice vinegar (optional)


Instructions

  1. Peel and julienne the mangoes. Thinly slice the red bell pepper and red onion. Chop the cilantro and shred the carrots.
  2. In a large bowl, mix the julienned mangoes, shredded carrots, sliced bell pepper, finely sliced onion, and chopped cilantro.
  3. Whisk together lime juice, soy sauce, honey or maple syrup, minced garlic, chopped chili or red pepper flakes, and rice vinegar in a small bowl.
  4. Pour the dressing over the salad mixture and gently toss until evenly coated.
  5. Chill in the fridge for 10–15 minutes before serving.
  6. Top with chopped peanuts just before serving.
