Ingredients

  • 22 oz raspberries (fresh or frozen)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 1 cup whipping cream (cold)
  • 2 packs ladyfingers
  • Juice and zest from 2 lemons


Instructions

  1. Prepare the raspberry curd by whisking eggs, yolks, sugar, and salt in a saucepan. Add raspberries and lemon juice, cooking over medium heat until thickened. Stir in butter until melted and let cool.
  2. Make the raspberry syrup by simmering water, sugar, lemon juice, and raspberries until dissolved. Cool completely.
  3. Whip cold cream to stiff peaks then gently fold in mascarpone until smooth.
  4. Assemble by dipping ladyfingers in raspberry syrup and layering them with raspberry curd and whipped cream mixture in a baking dish. Repeat layers.
  5. Chill for at least 4 hours before serving, garnishing with lemon slices and fresh raspberries.
