Instructions

  2. Melt the unsalted butter in a microwave-safe bowl and let it cool for about 10 minutes.
  3. In a mixing bowl, sift together flour, baking powder, baking soda, and salt.
  4. In another bowl, mix melted butter with both sugars until smooth; add vanilla extract, egg, and egg yolk.
  5. Gradually combine dry ingredients into the wet mixture until just incorporated; gently fold in raspberries and white chocolate chips.
  6. Use a large cookie scoop to portion about 3 oz of dough onto prepared sheets, placing six balls per sheet.
  7. Bake for 13-15 minutes until edges are lightly golden; top with extra white chocolate chips while warm.
