  • 15 Rice Papers
  • 1 sprig scallion (finely chopped)
  • Fresh cilantro (finely chopped)
  • 1 clove garlic (minced)
  • 1½ tbsp light soy sauce
  • 1 tbsp plant-based oyster sauce
  • ½ tbsp Chinese Black Vinegar (or ¼ tbsp rice vinegar)
  • ¼ cup cooking oil (60ml)
  • ½ tbsp chili flakes (to taste)


Instructions

  1. Soak the rice papers in water for about 30 seconds until soft. Press gently to remove bubbles.
  2. Use a sharp knife to cut the softened rice paper into wide, flat noodles.
  3. In a mixing bowl, combine noodles with soy sauce, plant-based oyster sauce, vinegar, chili flakes, minced garlic, chopped scallions, and cilantro.
  4. Heat oil until hot and pour over the seasoned noodles. Toss well to combine and serve immediately.
