  • 2 pounds Yukon gold potatoes, cut into 1-inch cubes
  • 3 cloves of garlic
  • 2 sprigs fresh rosemary
  • 4 tablespoons unsalted butter, softened
  • ½ cup heavy cream
  • ½ teaspoon kosher salt (plus 1 tablespoon for cooking)
  • ¼ teaspoon black pepper


Instructions

  1. Cook the Potatoes: Place potatoes in a large pot covered with cold water. Add 1 tablespoon of salt and bring to a boil. Reduce heat and simmer for 15-20 minutes until fork-tender.
  2. Prepare the Cream Mixture: In a small saucepan over medium heat, warm the heavy cream and butter until the butter melts.
  3. Infuse Flavors: Add garlic cloves and rosemary to the cream mixture. Let steep for 10 minutes before removing rosemary and mashing in garlic if desired.
  4. Mash the Potatoes: Drain cooked potatoes and return them to the pot. Mash using a potato masher or ricer until smooth.
  5. Combine & Season: Gradually incorporate the warm cream mixture into the mashed potatoes; season with salt and pepper to taste.
  6. Serve: Serve hot, garnished with additional rosemary and butter if desired.
