Ingredients

  • 6 ounces thin rice noodles
  • 3 ounces skinless boneless chicken breast (cut into strips)
  • 3 ounces small shrimp (peeled and deveined)
  • 2 leaves napa cabbage (sliced)
  • ½ large carrot (julienned)
  • 1 stalk celery (julienned)
  • 2 stalks green onion (green parts only)
  • 1½ tablespoons minced garlic
  • 1 tablespoon apple cider vinegar
  • 1½ tablespoons curry powder
  • 2 large eggs (beaten)
  • Neutral oil (as needed for cooking)


Instructions

  1. Boil water in a large pot, add rice noodles, and cook according to package instructions until tender. Drain and set aside.
  2. Heat oil in a wok over medium-high heat, stir-fry chicken until cooked through, about 5 minutes. Remove from pan.
  3. In the same wok, add shrimp and cook until pink, about 3-4 minutes. Remove from pan.
  4. Sauté garlic until fragrant, then add napa cabbage, carrot, celery; stir-fry for about 3-4 minutes.
  5. Return chicken and shrimp to the wok. Add cooked noodles, apple cider vinegar, curry powder, beaten eggs, and green onions; mix well.
  6. Stir-fry everything together for a few minutes until heated through and well combined.
