Ingredients
- 1 lb ground beef
- 1 small onion
- 2 cloves garlic
- 1 oz taco seasoning mix
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans
- 15 oz corn
- 1 cup salsa
- 6 small flour or corn tortillas
- 1 cup shredded Mexican cheese blend
Instructions
- 1. In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
- 2. Add diced onion and sauté until softened, then stir in minced garlic and cook until fragrant.
- 3. Mix in the taco seasoning and diced tomatoes (with juice), then remove from heat.
- 4. Spray the inside of your slow cooker with non-stick spray. Start layering by spreading salsa at the bottom, followed by tortilla strips, half of the beef mixture, black beans, corn, and another layer of tortilla strips. Repeat layers finishing with tortilla strips topped with remaining salsa.
- 5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
- 6. About 15 minutes before serving, sprinkle the cheese on top to melt.
- 7. Garnish with fresh cilantro and serve warm.
