  • 8 oz smoked salmon
  • 4 cups mixed greens
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 1/2 medium red onion
  • 4 oz feta cheese
  • 1/2 cup olives (your choice)
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tbsp dill
  • 1/2 tsp salt
  • 1/4 tsp pepper


Instructions

  1. Wash all produce thoroughly. Slice the cucumber into half-moons, halve the cherry tomatoes, and thinly slice the red onion.
  2. In a large mixing bowl, combine mixed greens, cucumber slices, cherry tomatoes, red onion, olives, feta cheese, and smoked salmon. Toss gently to mix.
  3. In a small bowl or jar, whisk together lemon juice, olive oil, dill, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
