- 1 1/4 cups flour
- 3/4 cup fine graham cracker crumbs
- 1/2 teaspoon baking powder

- 1/2 cup brown sugar
- 1/4 cup honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 3/4 cup mini chocolate chips
- 1/2 cup mini vegan marshmallows
- 1 coarsely chopped chocolate bar (about 1.55 ounces)
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, mix together the flour, graham cracker crumbs, baking powder, baking soda, and salt.
- In a stand mixer bowl, beat the softened butter and brown sugar until light and fluffy.
- Add honey, eggs, vanilla extract, and sour cream to the butter mixture; mix until well combined.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- Gently fold in the mini chocolate chips and vegan marshmallows.
- Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean with a few moist crumbs.
