  • 3/4 cup fine graham cracker crumbs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 3/4 cup mini chocolate chips
  • 1/2 cup mini vegan marshmallows
  • 1 coarsely chopped chocolate bar (about 1.55 ounces)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mix together the flour, graham cracker crumbs, baking powder, baking soda, and salt.
  3. In a stand mixer bowl, beat the softened butter and brown sugar until light and fluffy.
  4. Add honey, eggs, vanilla extract, and sour cream to the butter mixture; mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  6. Gently fold in the mini chocolate chips and vegan marshmallows.
  7. Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean with a few moist crumbs.
  8. Allow to cool completely in the pan before slicing.
