  • 15.25 ounces corn (undrained)
  • 14.5 ounces diced tomatoes (undrained)
  • 14.5 ounces chicken broth
  • 4 ounces diced green chilies (undrained)
  • 1 ounce dry ranch seasoning
  • 1 ½ teaspoon cumin
  • 1 tablespoon chili powder
  • ½ cup diced onion
  • 2 boneless, skinless chicken breasts
  • 8 ounces cream cheese (room temperature)


Instructions

  1. Rinse black beans under cold water to remove excess sodium; drain corn.
  2. In a slow cooker, combine black beans, corn, diced tomatoes, chicken broth, green chilies, ranch seasoning, cumin, chili powder, and diced onion.
  3. Add the boneless chicken breasts to the mixture.
  4. Cover and cook on low heat for about 4 hours or high heat for about 2 hours.
  5. Once cooked, remove chicken breasts and shred them with two forks.
  6. Return shredded chicken to the soup along with room temperature cream cheese; stir until melted.
