  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For the Toffee Sauce: 8 tbsp butter
  • ¾ cup brown sugar
  • ¾ cup heavy cream


Instructions

  1. Preheat the oven to 350°F (175°C) and spray your baking dish (9x9x3” or 9x11x3”) with nonstick spray.
  2. In a mixing bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet mixture; stir until just combined.
  5. Pour batter into prepared dish and bake for 45-55 minutes or until a toothpick comes out clean.
  6. For the toffee sauce: melt butter and brown sugar in a pot over medium-low heat for about 10 minutes; stir in heavy cream and vanilla extract; cook additional 5 minutes without boiling.
  7. Once the cake is baked and slightly cooled, poke holes on top and pour over cooled toffee sauce; let soak for at least an hour before serving.
