  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)


Instructions

  1. Prepare the strawberry filling by cooking strawberries with sugar and water until syrupy; let cool.
  2. Preheat your oven to 350°F (175°C) and prepare two greased and parchment-lined 9-inch round cake pans.
  3. Mix dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt in one bowl.
  4. In another bowl, whisk together melted butter, oils, sugars, eggs, and milk until well combined.
  5. Gradually add the wet mixture to the dry ingredients; stir until just combined.
  6. Pour the batter into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean; cool on a rack.
  7. For frosting, beat together softened cream cheese and butter, then incorporate powdered sugar and finely diced strawberries.
  8. Assemble by layering cake with strawberry jam and frosting; decorate with halved strawberries.
