  • ¾ cup (150g) granulated sugar
  • 1 tsp (5ml) pure vanilla extract
  • 2 large eggs (at room temperature)
  • ⅓ cup (80ml) sour cream
  • 1 ⅓ cups (190g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup (80ml) milk
  • 3 cups (420g) chopped fresh strawberries
  • 1 ½ tbsp (13g) all-purpose flour
  • 1 tbsp (12g) granulated sugar


Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. Prepare the crumb topping: Mix flour, sugars, and salt (if using unsalted butter). Stir in melted butter until crumbly.
  3. Make the cake batter: Whisk together melted butter, sugar, and vanilla; add eggs one at a time followed by sour cream. Mix dry ingredients separately and fold into wet until just combined.
  4. Layer strawberries: Toss strawberries with flour and sugar; scatter over cake batter. Top with crumb mixture.
  5. Bake for 40–50 minutes until golden brown. Cool on a wire rack before serving.
