Ingredients

Scale
  • 1 cup all-purpose flour (for crust)
  • 1/2 cup cold unsalted butter
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 pound fresh strawberries
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup all-purpose flour, 2 tablespoons granulated sugar, and 1/2 teaspoon salt. Cut in 1/2 cup cold unsalted butter until the mixture resembles coarse crumbs.
  3. Press this mixture firmly into the bottom of a greased baking dish. Bake for 15 minutes or until lightly golden.
  4. In another bowl, whisk together 2 large eggs, 1 cup granulated sugar, and 1 teaspoon vanilla extract until well combined.
  5. Stir in 1/2 cup heavy whipping cream, followed by 1 pound diced strawberries, then incorporate 1/3 cup all-purpose flour. Mix until smooth.
  6. Pour the custard mixture over the baked crust evenly. Return to the oven and bake for an additional 40 minutes or until set.
  7. Allow your bars to cool completely before refrigerating them for at least 4 hours. Once chilled, top with whipped topping and garnish with reserved whole strawberries before slicing into squares.
