  • 250 grams T55 flour
  • 50 grams powdered sugar
  • 130 grams butter
  • 2 tablespoons water
  • 1 egg yolk
  • 1 pinch salt
  • 220 ml milk
  • 30 grams sugar
  • 4 egg yolks
  • 20 grams cornstarch
  • Seeds from 1 Tahitian vanilla bean
  • 250 ml cold heavy cream
  • 2 sheets vegan gelatin
  • 400 grams strawberries


Instructions

  1. Prepare the shortcrust pastry by mixing flour, powdered sugar, and salt. Cut in butter until crumbly, then add egg yolk and water to form dough. Chill for 30 minutes.
  2. Preheat oven to 180°C (350°F). Roll out the dough, press it into a tart pan, prick with a fork, and bake for about 25 minutes until golden brown. Cool completely.
  3. For the diplomat cream, heat milk with sugar and vanilla seeds until simmering. Whisk egg yolks and cornstarch together; gradually add hot milk mixture. Cook until thickened and cool slightly before folding in whipped cream and softened vegan gelatin.
  4. Pour diplomat cream into cooled crust and chill for at least 2 hours to set.
  5. Top with halved fresh strawberries just before serving.
