Instructions
- Prepare the water bath canner by filling it with water and bringing it to a boil.
- Gather pint jars, lids, and bands; place lids in simmering water to soften sealing material.
- In a food processor, puree cleaned strawberries until liquified; transfer to a large saucepan.
- Add lemon juice and sugar to the strawberry puree; stir well.
- Heat over medium until reaching 190-200 degrees Fahrenheit without boiling; skim foam as needed.
- Fill clean, hot pint jars with concentrate, leaving 1/4 inch headspace; secure lids fingertip tight.
- Process jars in boiling water bath for 15 minutes; let sit undisturbed for 12-24 hours to seal.
