Ingredients

  • 6 cups strawberries (cleaned, tops removed)
  • 4 cups lemon juice (bottled, fresh, or a combination)
  • 6 cups granulated sugar


Instructions

  1. Prepare the water bath canner by filling it with water and bringing it to a boil.
  2. Gather pint jars, lids, and bands; place lids in simmering water to soften sealing material.
  3. In a food processor, puree cleaned strawberries until liquified; transfer to a large saucepan.
  4. Add lemon juice and sugar to the strawberry puree; stir well.
  5. Heat over medium until reaching 190-200 degrees Fahrenheit without boiling; skim foam as needed.
  6. Fill clean, hot pint jars with concentrate, leaving 1/4 inch headspace; secure lids fingertip tight.
  7. Process jars in boiling water bath for 15 minutes; let sit undisturbed for 12-24 hours to seal.
