  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice
  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a mixing bowl, blend melted coconut oil, cane sugar, and egg until well combined. Add the all-purpose flour, oat flour, cinnamon, and salt; mix until just combined.
  3. In a separate bowl, toss diced strawberries with cane sugar and lemon juice until evenly coated.
  4. Spread half of the base mixture into the prepared pan, layer with strawberry filling, then crumble remaining base over the top.
  5. Bake for approximately 45 minutes or until golden brown. Allow cooling completely before slicing into bars.
