  • 1 head red romaine lettuce
  • 2 cups mixed greens
  • 1 pint strawberries (sliced, remove caps)
  • 1 cup tomato-basil feta cheese (crumbled)
  • 1 cup pecans (chopped)
  • 6 whole strawberries (remove caps)
  • 1/4 cup tomato-basil feta cheese
  • 1/4 cup pecans
  • 1/4 cup olive oil
  • 1 Tbsp. apple cider vinegar
  • 2 Tbsp. sugar
  • 1/2 tsp. dried basil
  • 1/4 tsp. salt


Instructions

  1. Wash and dry the red romaine and mixed greens, tearing them into bite-sized pieces.
  2. Slice the strawberries, reserving six whole ones for the dressing.
  3. Combine greens with crumbled feta cheese and chopped pecans in a large salad bowl.
  4. In a separate bowl, blend reserved strawberries, feta cheese, pecans, olive oil, apple cider vinegar, sugar, dried basil, and salt until smooth.
  5. Drizzle dressing over the salad just before serving and toss gently.
  6. Serve immediately for maximum freshness.
