- 1 tablespoon quick-cooking tapioca or cornstarch
- Pinch of salt
Instructions
- Blend about half of the sliced strawberries with lemon juice and water (omit water if using cornstarch) until smooth.
- In a pot, combine sugar, tapioca (or cornstarch), and salt. Stir in the blended strawberry mixture and heat over medium until boiling. If using tapioca, lower heat to simmer for about 5 minutes until thickened; skip simmering with cornstarch once it thickens from boiling.
- Add the remaining sliced strawberries to the pot and stir until it simmers again before turning off the heat.
- Transfer to a wide container to cool quickly; store in an airtight jar in the refrigerator for up to 3-4 days or freeze for up to 3 months.
