  • 1 pint fresh strawberries
  • 1 cup unsalted butter (room temperature)
  • 3 cups granulated sugar
  • 5 large eggs (room temperature)
  • 3 cups all-purpose flour (sifted)
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 tbsp strawberry puree (reserved from the cake)
  • 2 cups powdered sugar (for the glaze)
  • 1 tsp pure lemon juice or lime juice


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Wash the strawberries, remove stems, and chop them into small pieces; reserve some for the glaze.
  3. In a mixing bowl, cream together room temperature butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in buttermilk, vanilla extract, and optional strawberry extract until combined.
  5. In another bowl, whisk together flour, salt, and baking soda. Gradually add dry ingredients to wet ingredients until just combined.
  6. Gently fold in chopped strawberries.
  7. Pour batter into a greased loaf pan and bake for about 70 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling before preparing the glaze by mixing reserved strawberry puree with powdered sugar and lemon juice.
  9. Once cooled completely, drizzle the glaze over the pound cake.
