  • 1 generous cup chopped peeled apple

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the milk, eggs, maple syrup, applesauce, and vanilla essence until well combined.
  3. In another bowl, mix the oats, baking powder, cinnamon, nutmeg, and salt until evenly distributed.
  4. Combine the wet and dry mixtures gently, then fold in the chopped apples and nuts if using.
  5. Grease a muffin tin lightly and fill each cup about three-quarters full with the mixture.
  6. Bake for approximately 28 minutes or until golden brown on top.
  7. Allow to cool slightly before transferring to a wire rack.
