Instructions
- Rinse sushi rice under cold water until clear. Combine with 2 cups water in a pot, bring to boil, then simmer covered for 20 minutes. Let it rest for an additional 10 minutes.
- For the teriyaki sauce, whisk together soy sauce, brown sugar, water, rice vinegar, grated garlic, grated ginger, toasted sesame oil, and cornstarch in a bowl. Sauté chicken in olive oil until golden brown on both sides; pour teriyaki sauce over it and simmer until thickened.
