Ingredients

  • 1 1/4 cups heavy cream
  • 3/4 cup whole milk
  • 1/4 cup Thai tea mix
  • 5 egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla paste or extract
  • 2-3 tbsp granulated sugar for topping


Instructions

  1. In a saucepan, combine heavy cream and milk; heat on low until just simmering. Remove from heat and add Thai tea mix. Steep for 15 minutes.
  2. Preheat the oven to 300°F (150°C).
  3. In a bowl, whisk together egg yolks, sugar, and vanilla until combined.
  4. Strain the infused cream through a fine-mesh sieve and return to low heat until it simmers again.
  5. Slowly drizzle hot cream into the egg mixture while whisking gently to avoid curdling.
  6. Strain the combined mixture into a measuring cup.
  7. Divide the custard into ramekins placed in a baking pan. Fill with boiling water halfway up the sides of ramekins.
  8. Bake for 35-40 minutes until slightly wobbly in the center. Remove from water and cool to room temperature, then refrigerate for at least 2 hours.
  9. When ready to serve, sprinkle sugar evenly on top of each custard and caramelize using a kitchen torch or broiler until bubbly and golden.
