- 1/4 cup espresso or strong brewed coffee
- 2 tbsp sugar
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together 1 cup flour, 2 tsp instant coffee granules, 1/4 cup cocoa powder, and a pinch of salt; set aside.
- In another bowl, cream together 1/2 cup room-temperature butter and 1/2 cup sugar until fluffy. Add 1 egg and 1 tsp vanilla extract; mix well.
- Gradually combine dry ingredients with wet mixture until just mixed.
- Scoop dough onto prepared sheets, spacing them two inches apart.
