  • 500g cooking apples (peeled, cored, sliced)
  • 500g eating apples (peeled, cored, sliced)
  • 75g golden syrup
  • 75g soft light brown sugar
  • 150g cold diced butter
  • 225g plain flour
  • 75g rolled oats
  • 5 tablespoons cooled toffee sauce
  • 1/2 teaspoon vanilla extract
  • 60ml double cream
  • 150g golden caster sugar or soft light brown sugar
  • 1 tablespoon apple juice
  • 1/2 teaspoon ground cinnamon (optional)
  • a pinch of salt
  • 75g demerara sugar


Instructions

  1. To make the toffee sauce, combine golden syrup, soft light brown sugar, butter, vanilla extract, and double cream in a saucepan over low to medium heat. Stir until melted and smooth. Pour into a heatproof jug and let cool.
  2. In a mixing bowl, combine plain flour, rolled oats, and a pinch of salt. Rub in cold diced butter until the mixture resembles breadcrumbs. Stir in demerara sugar.
  3. Preheat your oven to 180C/350F. Cook the sliced cooking apples with sugar and optional cinnamon in a large saucepan over low heat for about 5 minutes until softened. Transfer to a pie dish.
  4. Pour the cooled toffee sauce over the apples and sprinkle the crumble topping evenly on top. Bake for 30–40 minutes until golden brown.
