Ingredients

  • 1/2 cup salted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 20 caramels (unwrapped)
  • 1 tbsp milk
  • 2 cups milk chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the salted butter and granulated sugar in a mixing bowl until light and fluffy.
  3. Mix in the egg white and vanilla extract until well combined.
  4. Gradually add the all-purpose flour and baking powder, mixing until a dough forms.
  5. Roll out the dough to about 1/4 to 1/2 inch thick and cut out circles with a round cookie cutter. Place them on an ungreased baking sheet.
  6. Bake for 6-8 minutes, until puffy and no longer glossy. Cool on a wire rack.
  7. In a microwave-safe bowl, melt the caramels with milk until smooth.
  8. Spoon the caramel onto each cooled cookie and chill for 10-15 minutes.
  9. Melt the chocolate chips in intervals in the microwave, then spread over each cookie cup once cooled.
