Ingredients

  • 1/4 head red cabbage
  • 1 carrot
  • 4 kale leaves
  • 1/2 shallot or 1/4 red onion
  • 1/4 pomegranate (seeds only)
  • Salt to taste
  • Juice of 1/2 lemon
  • 1/2 tsp Dijon mustard
  • 1 tbsp pomegranate molasses
  • 4 tbsp olive oil


Instructions

  1. Thinly slice the red cabbage and shallot using a sharp knife.
  2. Grate the carrot for added sweetness.
  3. Remove the rib from each kale leaf, slice thinly, and massage to soften.
  4. Extract seeds from the pomegranate.
  5. In a large bowl, combine all prepared ingredients.
  6. For the dressing, mix lemon juice, pomegranate molasses, Dijon mustard, olive oil, and salt in a mason jar. Shake well.
  7. Pour dressing over salad and toss gently to combine.
