- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- Pinch of red pepper flakes, optional
- Sesame seeds for garnish

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the cauliflower into bite-sized florets and toss with olive oil on the baking sheet. Spread in a single layer.
- Roast for 20-25 minutes, flipping halfway through until tender and slightly browned.
- In a small saucepan, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger; heat until simmering and slightly thickened.
