  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in one egg and vanilla extract until well combined.
  4. In another bowl, whisk together all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add dry mixture to wet ingredients; stir gently until just combined.
  6. Fold in finely diced apple until evenly distributed.
  7. Spread batter evenly into the prepared pan and sprinkle with cinnamon-sugar topping.
  8. Bake for 25–30 minutes or until edges are golden brown and a toothpick comes out clean.
  9. Let cool completely before cutting into bars.
