Ingredients

Scale
  • 1 cup plus 1 tablespoon all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 medium very ripe bananas (peeled)
  • 1/3 cup granulated sugar
  • 1/4 cup vegetable or canola oil
  • 1 large egg
  • 2 rounded tablespoons sour cream (lite is okay or Greek yogurt may be substituted)
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3/4 cup walnuts (roughly chopped or 3/4 cup mini semi-sweet chocolate chips, optional)

Instructions

  1. Preheat your air fryer to 330°F. Spray the bottom and sides of your nonstick baking dish with nonstick cooking spray; set aside.
  2. In a medium bowl, combine flour, baking powder, salt, and baking soda. Whisk together until well combined; set aside.
  3. In a large bowl, add the peeled bananas. Mash them using a fork until smooth.
  4. To the mashed bananas, add granulated sugar, vegetable oil, egg, sour cream (or Greek yogurt), peanut butter, and vanilla extract. Whisk until fully integrated.
  5. Add the dry ingredient mixture into the wet mixture. Stir gently until just combined; do not overmix.
  6. If desired, fold in walnuts or chocolate chips.
  7. Turn the batter into the prepared baking dish. Spread it evenly with a spatula. Carefully place this dish in your air fryer and bake for about 30 to 40 minutes, checking at 25 minutes by inserting a toothpick.
  8. Once baked, remove the dish from the air fryer and let it cool on a wire rack for about 10 minutes before slicing.
