  • 1/4 cup reserved batter
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts
  • 1/2 cup flour
  • 1/2 cup brown sugar, packed
  • 1/2 tablespoon cinnamon
  • 4 tablespoons cold butter, cubed
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk


Instructions

  1. Preheat oven to 350°F (175°C) and prepare an angel food cake pan with nonstick spray.
  2. In a medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. Beat softened butter and sugar until fluffy; add eggs one at a time followed by vanilla and mashed bananas.
  4. Gradually mix in dry ingredients alternating with sour cream until just combined; fold in nuts or chocolate chips if desired.
  5. For the cream cheese filling, mix reserved batter with softened cream cheese and sugar until smooth.
  6. Layer batter in the prepared pan: spoon half of the batter, spread cream cheese filling over it, then top with remaining batter.
  7. Prepare streusel topping by combining walnuts, flour, brown sugar, cinnamon, and cold cubed butter until crumbly; sprinkle over the top.
