  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cups fresh berries (about 1 cup blueberries and 1/2 cup raspberries)
  • 6 oz. cream cheese (room temperature)
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk


Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin pan with paper liners.
  2. In one bowl, prepare the streusel topping by combining flour, sugar, and melted butter until crumbly.
  3. In another bowl, mix cream cheese, granulated sugar, cornstarch, and vanilla until smooth for the filling.
  4. Combine dry ingredients (flour, baking powder, salt) in a large bowl and set aside.
  5. In a separate bowl, whisk together the egg, Greek yogurt, vegetable oil, and vanilla until smooth.
  6. Gently fold wet ingredients into dry ingredients just until combined; then fold in berries.
  7. Fill muffin liners with batter, add cream cheese filling on top, and sprinkle with streusel.
  8. Bake for 30-35 minutes or until golden brown.
