  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 4 tablespoons blackened seasoning, divided
  • 6 tablespoons butter
  • 6-8 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • salt and pepper to taste
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano


Instructions

  1. Pound chicken to an even thickness, rub with olive oil, and season with blackened seasoning.
  2. Heat skillet over medium-high heat; cook chicken for 3-4 minutes on one side until dark amber.
  3. Flip chicken, reduce heat to low, add butter and garlic; cook until internal temperature reaches 165°F.
  4. Remove chicken and let rest under foil.
  5. In the same skillet, melt remaining butter; sauté garlic until fragrant.
  6. Add heavy cream and remaining blackened seasoning; simmer until thickened.
  7. Cook noodles according to package directions; reserve pasta water before draining.
  8. Stir parmesan into sauce until melted; mix in noodles and adjust seasoning.
  9. Serve topped with sliced chicken and extra cajun seasoning.
