- 1 cup cottage cheese
- 1 cup rolled oats
- 1 large egg
- 1/4 cup honey or maple syrup
- Zest of 1 large lemon (about 1 tbsp)
- 3/4 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
- In a blender or food processor, blend cottage cheese, oats, egg, honey or maple syrup, lemon zest, baking powder, and salt until well combined.
- Pour the mixture into a bowl and gently fold in the blueberries.
- Allow the batter to rest for about 5 minutes.
- Fill each muffin cup about three-quarters full with the batter.
- Bake for 18-22 minutes until golden and firm to touch.
- Cool in the pan briefly before transferring to a wire rack to cool completely.
