  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsweetened coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line an 8-inch square baking pan with parchment paper.
  3. In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
  4. Stir in melted coconut oil and vanilla until crumbly.
  5. Press half of the oat mixture into the pan as the base layer.
  6. In another bowl, combine blueberries, granulated sugar, and cornstarch; spread over the base layer.
  7. Crumble remaining oat mixture on top and gently press down.
  8. Bake for 35–40 minutes until golden brown and bubbly.
  9. Allow to cool completely before slicing into squares.
