  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken breast
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (panko or regular)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, pound the chicken breasts to a thickness of about ¼ inch.
  3. Layer each breast with a slice of chicken breast and Swiss cheese. Roll tightly and secure with toothpicks.
  4. Season flour with salt and pepper; dredge each roll in flour, dip in beaten eggs, and coat with breadcrumbs.
  5. Heat olive oil and butter in a skillet over medium heat. Sear the rolls for about 2–3 minutes per side until golden brown.
  6. Place the rolls in a baking dish and bake uncovered for 20–25 minutes until they reach an internal temperature of 165°F (74°C).
  7. For the sauce, melt butter in a saucepan, add flour, then gradually whisk in milk. Stir in Dijon mustard and Parmesan until thickened.
  8. Remove toothpicks before serving, slice into rounds, drizzle with sauce, and garnish as desired.
