- 1 cup breadcrumbs (panko or regular)

- 2 tbsp butter
- 1 cup milk
- 1 tsp Dijon mustard
- ½ cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Using a meat mallet, pound the chicken breasts to a thickness of about ¼ inch.
- Layer each breast with a slice of chicken breast and Swiss cheese. Roll tightly and secure with toothpicks.
- Season flour with salt and pepper; dredge each roll in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Sear the rolls for about 2–3 minutes per side until golden brown.
- Place the rolls in a baking dish and bake uncovered for 20–25 minutes until they reach an internal temperature of 165°F (74°C).
- For the sauce, melt butter in a saucepan, add flour, then gradually whisk in milk. Stir in Dijon mustard and Parmesan until thickened.
- Remove toothpicks before serving, slice into rounds, drizzle with sauce, and garnish as desired.
